Recipes finally updated on December 31, 2006
Now that summer is over, I will be adding recipes to this page.
I hope you and your family may still enjoy them.
I am planning on changing them monthly for the winter,
so keep visiting us to see what's new in the kitchen.
This is the season for comfort foods. What could be more comforting
than a hot bowl of soup followed by a big slice of apple pie?

Great Grandma Gazsi's Green Pumpkin Soup

A family favorite that is sure to warm those cold, weary bones!

Ingredients:
1 green pumpkin
1 onion
sour cream ( plain yogurt might work, too)

Directions:
1. Grate pumpkin and onion into a pan.
2. Add water half way.
3. Heat to boiling, then turn down to medium and let simmer.
4. Depending on the size of the pumpkin, turn off when pumpkin is tender.
5. Let cool, serve with a spoonful of sour cream in each bowl.
6. Season with salt and pepper if preferred.

Variations:
Because this is a mild flavored soup, you can add any of the following to
spruce it up and make it your own:
leftover greens such as swiss chard, kale, collards, broccoli, cabbage
a taste of hot peppers of your pleasure
green beans, sweet peas( I can't live without them!)
a grated carrot
garlic, green onions, or leek
replace an equal amount of water with 1 can of chicken stock


Lexi Style Two Bean Casserole
1lb Mixed Bag of Frozen Green and Yellow Beans
1 Can Cheddar Soup or Cheddar Broccoli Soup
1/2 Can of Evaporated Milk
Those famous Fried Onions

Thaw beans in fridge. Place in casserole dish with all ingredients except
onions. Bake at 375degrees for about a half hour. Place onions on top and
stir lightly. Bake until onions are golden brown.


Sloppy, Backwards Potato Omelet
2-3 Potatoes, washed and sliced with skins
Leftover Greens: Spinach, Kale, Swiss Chard, or other
2-3 Eggs
Olive Oil

Heat enough oil in pan to cover+ the bottom of the pan. Add potatoes and fry
until golden brown. Stir frequently to prevent burning. Add greens, cook until
heated. Stir frequently to heat evenly. Add eggs, cook until eggs are fully
cooked. Stir frequently to cook evenly.
Add your favorite cheese, salt, and pepper to taste, and serve.
Easy Apply Berry Bumble Pie
This is a favorite the whole family will
rave about! Makes 2 pies. Trust me, 1 pie is not enough!

Ingredients:

8-9 tart apples (winesaps preffered)
2 12 oz. bags of frozen mixed berries
1 TBSP flour
1 TBSP corn starch
juice from 1 freshly squeezed lemon
1 1/2 cup sugar or a little less
1 tsp cinnamon
2 packages 9" deep dish 2 crust pie shells
or 4 homeade crusts

Directions:
1. Preheat oven at 350degrees.
2. Slice apples in mixing bowl.
3. Add berries, lemon juice.
4. Add corn starch, cinnamon, sugar, flourMix together all ingredients.
5. Fill 2 pie shells and cover with remaining shells.
6. Bake at 350degrees for 45-50 minutes.
7. You may need to cover edges of crust with aluminum foil to prevent burning.
8. Let set for half an hour and enjoy.

Prep time 15 minutes, bake time 45 minutes, enjoyment time unforgettable!


                                        Cabbage Tomato Soup

   1/2 head or 1 small head of green cabbage, chopped
   3 tomatoes, peeled pureed in a blender
   1 onion, chopped
   seasonings to taste preference

  Place chopped cabbage, tomatoes, onion to a pan.
  Add seasonings and enough water to cover cabbage.
  Boil ten minutes and turn down to simmer half hour.
  Serve as a side dish or main meal.
  Add other leftover vegetables, potatoes, pasta or other for variations.


Sausage Soup Ala Lexi

Enough Browned Sausage, Sweet or Spicy, to Feed Your Crew
Lots of Chopped up Greens: Cabbage, Kale, Collards, whatever floats
your boat!
1 Minced Onion or Some Garlic Cloves
Kidney Beans
1 or 2 Tomatoes, Peeled and Pureed
A Few Potatoes or Other Root Veggies if desired.
Add all ingredients in a big pot. Also add seasoning to taste, although
sometimes the sausage has enough. Bring to boil and let simmer until
vegetables are tender.
You can substitute pepperoni for sausage or omit any of the ingredients
to make it your own.



                            Leftover Mashed Potato Soup
Take your pot of leftover mashed potatoes and add enough milk, light           
cream, or water to thin them.
Heat and med, stirring frequently to prevent burning.
Leftover ham, other vegetables, cheese, seasonings may be added for a         
unique touch.
Serve with cheddar cheese or chives sprinkled on top.
