{"id":1151,"date":"2010-05-06T22:44:43","date_gmt":"2010-05-07T02:44:43","guid":{"rendered":"http:\/\/www.gazybrothersfarm.net\/blog\/?p=1151"},"modified":"2010-05-06T22:44:43","modified_gmt":"2010-05-07T02:44:43","slug":"kale-chickpeas-and-leeks-braised-in-olive-oil","status":"publish","type":"post","link":"https:\/\/www.gazybrothersfarm.net\/blog\/kale-chickpeas-and-leeks-braised-in-olive-oil\/","title":{"rendered":"Kale, Chickpeas and Leeks Braised in Olive Oil"},"content":{"rendered":"<p><em>Type of dish: Side Dish<\/em><\/p>\n<p>1\/4 cup olive oil<br \/>\n1 large leek, white and light green part only, quartered, chopped and rinsed<br \/>\n2 garlic cloves, minced<br \/>\n1 teaspoon salt<br \/>\n1 heaping teaspoon smoked paprika<br \/>\n1 bunch kale, washed, stemmed, and chopped<br \/>\n1 (15-ounce) can chickpeas, rinsed<br \/>\n2 heaping Tablespoons chopped roasted red pepper<\/p>\n<p>Add olive oil to a large, heavy-bottomed pot over medium-high heat. When oil shimmers, add the leek, garlic, salt and paprika and stir until leek wilts, about 1 minute. Add kale, chickpeas, and red pepper and stir to combine. Cover and cook over medium heat for 20 to 30 minutes, checking to make sure pan doesn&#8217;t scorch. If needed, add a tablespoon of water to keep a very small amount of liquid in the pan. Once kale is tender, taste and adjust seasonings, if needed.
