{"id":1195,"date":"2010-09-26T21:37:32","date_gmt":"2010-09-27T01:37:32","guid":{"rendered":"http:\/\/www.gazybrothersfarm.net\/blog\/?p=1195"},"modified":"2010-09-26T21:37:32","modified_gmt":"2010-09-27T01:37:32","slug":"plum-and-almond-cobbler","status":"publish","type":"post","link":"https:\/\/www.gazybrothersfarm.net\/blog\/plum-and-almond-cobbler\/","title":{"rendered":"Plum and Almond Cobbler"},"content":{"rendered":"<p><em>Type of dish: Dessert<\/em><\/p>\n<p>1\/2 cup firmly packed light brown sugar<br \/>\n2 Tablespoons cornstarch<br \/>\n1\/2 teaspoon cinnamon<br \/>\n2 1\/2 pounds shiro plums or other plums, pitted and quartered<br \/>\n2 Tablespoons fresh lemon juice<br \/>\n2 Tablespoons unsalted butter, cut into bits<br \/>\n1 cup granulated sugar<br \/>\n3\/4 cup all-purpose flour<br \/>\n1 teaspoon baking powder<br \/>\n1\/2 teaspoon salt<br \/>\n3\/4 cup sliced almonds<br \/>\n1 large egg, beaten lightly<\/p>\n<p>Preheat oven to 375\u00baF.<\/p>\n<p>In a large bowl whisk together brown sugar, cornstarch, and cinnamon and add plums, lemon juice, and butter. Toss mixture well and spoon into a shallow 3-quart baking dish.<\/p>\n<p>In a food processor pulse together granulated sugar, flour, baking powder, salt, and 1\/2 cup almonds until almonds are ground fine. Add egg and pulse until blended. Spoon flour mixture over plum mixture, pulling some plum wedges up for presentation.
