{"id":1197,"date":"2010-09-26T21:40:32","date_gmt":"2010-09-27T01:40:32","guid":{"rendered":"http:\/\/www.gazybrothersfarm.net\/blog\/?p=1197"},"modified":"2010-09-26T21:40:32","modified_gmt":"2010-09-27T01:40:32","slug":"mock-crab-cakes","status":"publish","type":"post","link":"https:\/\/www.gazybrothersfarm.net\/blog\/mock-crab-cakes\/","title":{"rendered":"Mock Crab Cakes"},"content":{"rendered":"<p><em>Type of dish: Appetizer, Main Dish, Side Dish<\/em><\/p>\n<p>2 cups zucchini, grated<br \/>\n1 onion, finely chopped or grated<br \/>\n1\/2 cup red bell pepper, finely diced<br \/>\n1 1\/2 cups Italian bread crumbs, divided<br \/>\n1 Tablespoon Old Bay seasoning<br \/>\n1 Tablespoon mayonnaise<br \/>\n1 teaspoon Dijon mustard<br \/>\n1 egg, beaten<br \/>\nvegetable oil for frying<\/p>\n<p>Combine all ingredients in a small bowl. The texture can be adjusted &#8212; if it&#8217;s too dry, add another egg; if too wet, add more bread crumbs.<\/p>\n<p>Heat the vegetable oil in a skillet. Form mixture into patties and fry over medium heat until golden brown on both sides, about 2 to 3 minutes per side. Makes 4 big or 6 medium cakes.
