{"id":1219,"date":"2010-09-26T22:03:28","date_gmt":"2010-09-27T02:03:28","guid":{"rendered":"http:\/\/www.gazybrothersfarm.net\/blog\/?p=1219"},"modified":"2010-09-26T22:03:28","modified_gmt":"2010-09-27T02:03:28","slug":"carrot-potato-swiss-chard-curry","status":"publish","type":"post","link":"https:\/\/www.gazybrothersfarm.net\/blog\/carrot-potato-swiss-chard-curry\/","title":{"rendered":"Carrot Potato Swiss Chard Curry"},"content":{"rendered":"<p><em>Type of dish: Main Dish, Side Dish<\/em><\/p>\n<p>3 medium potatoes, unpeeled, scrubbed, and cut into 1-inch pieces<br \/>\n2 large carrots, cut into 1\/4&#8243; rounds<br \/>\n1 Tablespoon olive oil<br \/>\n2 Tablespoons sugar<br \/>\n2 teaspoons ground cumin<br \/>\n1\/2 teaspoon salt<br \/>\npinch cayenne pepper, or more to taste<br \/>\n3 cups Swiss chard, coarsely chopped<br \/>\n3 medium tomatoes, diced<\/p>\n<p>Place potatoes and carrots in a large saucepan, and cover completely with water. Bring to a boil, and boil for 4-6 minutes, until crisp-tender. Heat oil in a large skillet over medium heat until hot. Add potatoes, carrots, sugar, cumin, salt, and cayenne pepper. Cook for 2-3 minutes. Stir in tomatoes and Swiss chard. Cover and simmer for 4-6 minutes or until Swiss chard is tender-crisp.
