{"id":1223,"date":"2010-09-26T22:10:25","date_gmt":"2010-09-27T02:10:25","guid":{"rendered":"http:\/\/www.gazybrothersfarm.net\/blog\/?p=1223"},"modified":"2010-09-26T22:10:25","modified_gmt":"2010-09-27T02:10:25","slug":"bitter-green-salad-with-roasted-pears","status":"publish","type":"post","link":"https:\/\/www.gazybrothersfarm.net\/blog\/bitter-green-salad-with-roasted-pears\/","title":{"rendered":"Bitter Green Salad with Roasted Pears"},"content":{"rendered":"<p><em>Type of dish: Condiment, Salad, Side Dish<\/em><\/p>\n<p>For salad<br \/>\n8 firm-ripe Bosc pears (4 lb), peeled, cored, and each cut lengthwise into 8 wedges<br \/>\n1 1\/2 Tablespoons extra-virgin olive oil<br \/>\n1 small head chicory<br \/>\n1 small head escarole<br \/>\n1 small head radicchio<br \/>\n1 bunch watercress, coarse stems discarded<br \/>\n1 bunch mizuna, coarse stems discarded<br \/>\n1 small head romaine<\/p>\n<p>For dressing<br \/>\n1 Tablespoon finely chopped shallot<br \/>\n2 1\/2 Tablespoons cider vinegar<br \/>\n1\/2 teaspoon honey<br \/>\n1\/4 teaspoon salt<br \/>\n1\/8 teaspoon black pepper<br \/>\n1\/4 cup plus 1 Tablespoon extra-virgin olive oil<\/p>\n<p>Roast pears and make salad:<br \/>\nPut oven rack in middle position and preheat oven to 425\u00b0F.<br \/>\nToss pears with oil and spread in 1 layer in a 17- by 12-inch shallow baking pan, then season with salt and pepper. Roast pears, stirring and turning over twice, until pears are tender and beginning to brown, 20 to 30 minutes, then cool about 15 minutes.<br \/>\nWhile pears are roasting and cooling, tear enough tender chicory and escarole leaves (discard ribs) into bite-size pieces to measure 6 cups total. Tear enough radicchio, watercress, mizuna, and romaine into bite-size pieces to measure 10 cups total.
