{"id":1910,"date":"2017-07-22T07:00:34","date_gmt":"2017-07-22T11:00:34","guid":{"rendered":"http:\/\/www.gazybrothersfarm.net\/blog\/?p=1910"},"modified":"2017-07-22T19:20:36","modified_gmt":"2017-07-22T23:20:36","slug":"panzanella-with-sun-dried-tomato-dressing","status":"publish","type":"post","link":"https:\/\/www.gazybrothersfarm.net\/blog\/panzanella-with-sun-dried-tomato-dressing\/","title":{"rendered":"Panzanella with Sun-dried Tomato Dressing"},"content":{"rendered":"<p style=\"text-align: center\"><a href=\"http:\/\/www.gazybrothersfarm.net\/blog\/wp-content\/uploads\/2017\/07\/01a96830351c40c97c5e5a9ecf1c4594109166a635-e1500590080740.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1917\" src=\"http:\/\/www.gazybrothersfarm.net\/blog\/wp-content\/uploads\/2017\/07\/01a96830351c40c97c5e5a9ecf1c4594109166a635-e1500590080740.jpg\" alt=\"01a96830351c40c97c5e5a9ecf1c4594109166a635\" width=\"650\" height=\"598\" \/><\/a><\/p>\n<p>When I think of summer I think of tomatoes,\u00a0cucumbers and fresh Gazy Brothers Farm veggies.\u00a0\u00a0\u00a0Panzanella is a great way to use leftover veggies and bread.\u00a0 It&#8217;s also a wonderful salad to bring to\u00a0picnics and outdoor events.<\/p>\n<p>For this particular recipe I started with a basic panzanella recipe from Ina Garten.\u00a0 Instead of a simple oil and vinegar dressing\u00a0\u00a0I\u00a0made a sun-dried tomato\u00a0 vinaigrette .\u00a0 I\u00a0really love the\u00a0flavor and intensity that sun-dried tomato\u00a0brings to any basic vinaigrette recipe.\u00a0\u00a0\u00a0Sun-dried tomato vinaigrettes can be used\u00a0thru the summer as a way to\u00a0add a\u00a0depth of flavor into any summer salad; like this panzanella.<\/p>\n<p style=\"text-align: left\">Panzanella Ingredients:\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 <a href=\"http:\/\/www.gazybrothersfarm.net\/blog\/wp-content\/uploads\/2017\/07\/010755235d3c80e24995c66dc19c79f908ac68f84e-e1500590368894.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-1921 alignright\" src=\"http:\/\/www.gazybrothersfarm.net\/blog\/wp-content\/uploads\/2017\/07\/010755235d3c80e24995c66dc19c79f908ac68f84e-e1500590368894.jpg\" alt=\"010755235d3c80e24995c66dc19c79f908ac68f84e\" width=\"206\" height=\"274\" \/><\/a><\/p>\n<p>1 small French bread or boule, cut into 1-inch cubes (6 cups)<br \/>\n1 teaspoon kosher salt<br \/>\n2 large, ripe tomatoes, cut into 1-inch cubes<br \/>\n1 hothouse cucumber, unpeeled, seeded, and sliced 1\/2-inch thick<br \/>\n1 red bell pepper, seeded and cut into 1-inch cubes<br \/>\n1 yellow bell pepper, seeded and cut into 1-inch cubes<br \/>\n1\/2 red onion, cut in 1\/2 and thinly sliced<br \/>\n20 large basil leaves, coarsely chopped<\/p>\n<p>&nbsp;<\/p>\n<p>Ingredients for the vinaigrette:<\/p>\n<p><a href=\"http:\/\/www.gazybrothersfarm.net\/blog\/wp-content\/uploads\/2017\/07\/01a613086b73990d0e39ad4521e15e7c92670ba229-e1500590256763.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-1916 alignleft\" src=\"http:\/\/www.gazybrothersfarm.net\/blog\/wp-content\/uploads\/2017\/07\/01a613086b73990d0e39ad4521e15e7c92670ba229-e1500590256763.jpg\" alt=\"01a613086b73990d0e39ad4521e15e7c92670ba229\" width=\"165\" height=\"165\" \/><\/a>3-4 heaping tablespoons of sun-dried tomatoes in oil, drained<br \/>\n1\/2 pint of cherry tomatoes<br \/>\n2 tablespoons red wine vinegar<br \/>\n6 tablespoons good olive oil<br \/>\n1 garlic clove, diced<br \/>\n1 teaspoon kosher salt<br \/>\n3\/4 teaspoon freshly ground black pepper<\/p>\n<p>Drizzle bread cubes with olive oil and season with salt, pepper and garlic powder.
