{"id":555,"date":"2009-10-04T00:00:18","date_gmt":"2009-10-04T04:00:18","guid":{"rendered":"http:\/\/www.gazybrothersfarm.net\/blog\/?p=555"},"modified":"2009-10-06T21:38:34","modified_gmt":"2009-10-07T01:38:34","slug":"fresh-peach-pie","status":"publish","type":"post","link":"https:\/\/www.gazybrothersfarm.net\/blog\/fresh-peach-pie\/","title":{"rendered":"Fresh Peach Pie"},"content":{"rendered":"<p><em>Type of dish: Dessert<\/em><\/p>\n<p>Crust for 9&#8243; pie<br \/>\n1 egg<br \/>\n6 cups peaches, peeled, pitted, and sliced (about 2 lbs)<br \/>\n2 Tablespoons fresh lemon juice<br \/>\n1\/4 cup all purpose flour<br \/>\n2\/3 cup sugar<br \/>\n1\/4 teaspoon salt<br \/>\npinch ground nutmeg<br \/>\n2 Tablespoons unsalted butter<\/p>\n<p>Preheat oven to 425. Beat egg. Lay bottom crust in pie pan, brush with egg. Roll out pastry for top crust and cut into 3\/4&#8243; wide strips.<\/p>\n<p>Put peaches in large bowl and sprinkle with lemon juice, tossing to coat well. Set aside. In a smaller bowl, mix together the flour, sugar, salt, and nutmeg.<\/p>\n<p>Drain peaches. Combine dry ingredient with peaches, mix thoroughly.<br \/>\nPut fruit mixture in pie crust and dot with butter. Use the pastry strips to make a lattice top.
