{"id":591,"date":"2009-10-04T00:39:44","date_gmt":"2009-10-04T04:39:44","guid":{"rendered":"http:\/\/www.gazybrothersfarm.net\/blog\/?p=591"},"modified":"2009-10-10T17:25:41","modified_gmt":"2009-10-10T21:25:41","slug":"fall-squash-and-apple-soup","status":"publish","type":"post","link":"https:\/\/www.gazybrothersfarm.net\/blog\/fall-squash-and-apple-soup\/","title":{"rendered":"Fall Squash and Apple Soup"},"content":{"rendered":"<p><em>Type of dish: Soup<\/em><\/p>\n<p>2 lbs butternut or acorn squash or pumpkin, halved and seeded<br \/>\n3 cups vegetable broth<br \/>\n2 tart apples, peeled, cored and chopped<br \/>\n1\/2 cup onion, chopped<br \/>\n1 cup unsweetened apple juice<br \/>\n2 teaspoons fresh ginger root, grated<br \/>\n1 Tablespoon fresh lemon juice<br \/>\n1\/2 teaspoon salt<br \/>\nsalt and freshly ground white pepper, to taste<br \/>\nsour cream<br \/>\nSnipped fresh chives<\/p>\n<p>Place squash or pumpkin cut side down on a rack set over gently simmering water in a saucepan. Cover and steam until tender, about 10 minutes. Cool squash slightly, then scoop pulp from shells.<\/p>\n<p>Combine 1\/4 cup broth, apples, and onion in a heavy medium saucepan. Cover and cook over low heat for 10 minutes. Add squash or pumpkin pulp, remaining broth, apple juice, ginger, and 1\/4 teaspoon salt. Cover and simmer until ingredients are very tender, about 20 minutes.<\/p>\n<p>Puree soup in batches in food processor or blender. Strain through a sieve into a clean saucepan, pressing puree with the back of a spoon. Reheat soup gently. Add lemon juice. Season with salt and white pepper, to taste.<\/p>\n<p>Ladle into bowls.
