{"id":595,"date":"2009-10-05T20:20:00","date_gmt":"2009-10-06T00:20:00","guid":{"rendered":"http:\/\/www.gazybrothersfarm.net\/blog\/?p=595"},"modified":"2009-10-06T21:27:57","modified_gmt":"2009-10-07T01:27:57","slug":"sweet-and-savory-kale","status":"publish","type":"post","link":"https:\/\/www.gazybrothersfarm.net\/blog\/sweet-and-savory-kale\/","title":{"rendered":"Sweet and Savory Kale"},"content":{"rendered":"<p><em>Type of dish: Side Dish<\/em><\/p>\n<p>2 Tablespoons olive oil<br \/>\n1 small onion, diced<br \/>\n2 cloves garlic, minced<br \/>\n1 Tablespoon Dijon mustard<br \/>\n4 teaspoons white sugar<br \/>\n1 Tablespoon cider vinegar<br \/>\n1 1\/2 cups vegetable broth<br \/>\n4 cups stemmed, torn and rinsed kale<br \/>\n1\/4 cup dried cranberries<br \/>\nsalt and pepper to taste<br \/>\n1\/4 cup sliced almonds<\/p>\n<p>Heat olive oil in a large pot over medium heat. Stir in the onion and garlic; cook and stir until the onion softens and turns translucent, about 5 minutes. Stir in the mustard, sugar, vinegar, and vegetable broth, and bring to a boil over high heat. Stir in the kale, cover, and cook 5 minutes until wilted.<br \/>\nStir in the dried cranberries, and continue boiling, uncovered, until the liquid has reduced by about half, and the cranberries have softened, about 15 minutes.<\/p>\n<p>Season to taste with salt and pepper.
