{"id":599,"date":"2009-10-05T20:24:49","date_gmt":"2009-10-06T00:24:49","guid":{"rendered":"http:\/\/www.gazybrothersfarm.net\/blog\/?p=599"},"modified":"2009-10-06T21:26:12","modified_gmt":"2009-10-07T01:26:12","slug":"ratatouille","status":"publish","type":"post","link":"https:\/\/www.gazybrothersfarm.net\/blog\/ratatouille\/","title":{"rendered":"Ratatouille"},"content":{"rendered":"<p><em>Type of dish: Main Dish<\/em><\/p>\n<p>Cook time: about 35 minutes<\/p>\n<p>2 Tablespoons olive oil<br \/>\n2 cloves garlic, crushed and minced<br \/>\n1 large onion, quartered and thinly sliced<br \/>\n1 small eggplant, cubed<br \/>\n2 green bell peppers, coarsely chopped<br \/>\n4 large tomatoes, coarsely chopped<br \/>\n3 to 4 small zucchini, cut into 1\/4&#8243; slices<br \/>\n1 Tablespoon fresh basil<br \/>\n1 1\/2 teaspoons fresh oregano or 1\/2 dried oregano<br \/>\n3\/4 teaspoon fresh thyme or 1\/4 dried thyme<br \/>\n2 Tablespoons chopped fresh parsley<\/p>\n<p>In a 4-quart Dutch oven or saucepan, heat olive oil over medium heat. Add garlic and onions and cook, stirring often, until softened, about 6 to 7 minutes. Add eggplant, stir until coated with oil. Add peppers, stir to combine. Cover and cook for 10 minutes, stirring occasionally to keep vegetables from sticking.<\/p>\n<p>Add tomatoes, zucchini, and herbs; mix well.
