{"id":601,"date":"2009-10-05T20:26:32","date_gmt":"2009-10-06T00:26:32","guid":{"rendered":"http:\/\/www.gazybrothersfarm.net\/blog\/?p=601"},"modified":"2009-10-06T21:25:12","modified_gmt":"2009-10-07T01:25:12","slug":"fresh-basil-pesto","status":"publish","type":"post","link":"https:\/\/www.gazybrothersfarm.net\/blog\/fresh-basil-pesto\/","title":{"rendered":"Fresh Basil Pesto"},"content":{"rendered":"<p><em>Type of dish: Condiment<\/em><\/p>\n<p>2 cups fresh basil leaves, packed<br \/>\n1\/2 cup freshly grated Parmesan-Reggiano or Romano cheese<br \/>\n1\/2 cup extra virgin olive oil<br \/>\n1\/3 cup pine nuts or walnuts<br \/>\n3 medium sized garlic cloves, minced<br \/>\nSalt and pepper, to taste<\/p>\n<p>Combine the basil with the pine nuts, pulse a few times in a food processor. (If you are using walnuts instead of pine nuts and they are not already chopped, pulse them a few times first, before adding the basil.) Add the garlic, pulse a few more times.<\/p>\n<p>Slowly add the olive oil in a constant stream while the food processor is on. Stop to scrape down the sides of the food processor with a rubber spatula. Add the grated cheese and pulse again until blended. Add salt and black pepper to taste.<\/p>\n<p>Makes 1 cup.
