{"id":626,"date":"2009-10-05T20:55:02","date_gmt":"2009-10-06T00:55:02","guid":{"rendered":"http:\/\/www.gazybrothersfarm.net\/blog\/?p=626"},"modified":"2009-10-06T21:14:22","modified_gmt":"2009-10-07T01:14:22","slug":"baba-ghanouj-or-baba-ganoush","status":"publish","type":"post","link":"https:\/\/www.gazybrothersfarm.net\/blog\/baba-ghanouj-or-baba-ganoush\/","title":{"rendered":"Baba Ghanouj (or Baba Ganoush)"},"content":{"rendered":"<p><em>Type of dish: Appetizer<\/em><\/p>\n<p>An Arabic eggplant dip, similar to hummus<\/p>\n<p>2 1-pound eggplants, halved lengthwise<br \/>\n1\/4 cup olive oil<br \/>\n1\/4 cup tahini (sesame seed paste &#8211; available at Middle Eastern or natural foods stores)<br \/>\n3 Tablespoons fresh lemon juice<br \/>\n1 clove garlic, chopped<br \/>\na pinch or two of cumin<br \/>\nsalt and pepper, to taste<\/p>\n<p>Preheat oven to 375\u00b0 F. Generously oil rimmed baking sheet. Place eggplant halves, cut side down, on sheet. Roast until eggplant is very soft, about 45 minutes. Cool slightly. Using a spoon, scoop out pulp from the eggplants into a strainer set over a bowl. Let stand 30 minutes, allowing excess liquid to drain from the eggplant.<\/p>\n<p>Transfer the eggplant pulp to a food processor. Add olive oil, tahini, lemon juice, and garlic; process until almost smooth. Season to taste with cumin, salt, and pepper. Transfer to a small bowl.<\/p>\n<p>Can be made 1 day ahead, cover and chill. Bring to room temperature before serving.
