{"id":751,"date":"2009-10-18T18:03:58","date_gmt":"2009-10-18T22:03:58","guid":{"rendered":"http:\/\/www.gazybrothersfarm.net\/blog\/?p=751"},"modified":"2009-10-18T18:03:58","modified_gmt":"2009-10-18T22:03:58","slug":"poor-mans-steak-bistecche-dei-poveri","status":"publish","type":"post","link":"https:\/\/www.gazybrothersfarm.net\/blog\/poor-mans-steak-bistecche-dei-poveri\/","title":{"rendered":"Poor Man&#8217;s Steak (Bistecche dei Poveri)"},"content":{"rendered":"<p><em>Type of dish: Main Dish, Side Dish<\/em><\/p>\n<p>2 eggplants (1 1\/2 lbs total), ends trimmed, cut crosswise into 3\/4&#8243; slices<br \/>\n2 teaspoons salt<br \/>\n1 Tablespoon extra virgin olive oil<br \/>\n1 Tablespoon balsamic vinegar<br \/>\n1 Tablespoon chopped fresh mint<br \/>\n1\/2 teaspoon dried oregano<br \/>\n1 small clove garlic, minced<br \/>\nfreshly ground pepper, to taste<\/p>\n<p>Sprinkle eggplant with salt and drain in a colander for 30 minutes.<\/p>\n<p>Preheat oven to 450\u00b0 F. Lightly coat 2 baking sheets with nonstick cooking spray.<\/p>\n<p>Rinse the eggplant under cold water and pat dry. Arrange in a single layer on the prepared baking sheets. Bake for 20 minutes, turn eggplant over and bake for 5 minutes longer, or until golden brown and tender.<\/p>\n<p>Stir together oil, vinegar, mint, oregano, and garlic in a small bowl. Season the eggplant with pepper and brush tops with the oil mixture.
