The important thing is that there is a good blend of flavors.<\/p>\n<p>Beets, boiled until a fork goes in easily (40 to 60 minutes), peeled and sliced into strips<br \/>\nFresh arugula, rinsed and patted dry<br \/>\nGoat cheese (chevre)<br \/>\nWalnuts, chopped<br \/>\nDressing:<br \/>\n1\/4 cup olive oil<br \/>\nJuice of 1\/2 lemon<br \/>\n1\/4 teaspoon dry powdered mustard<br \/>\n3\/4 teaspoon sugar<br \/>\nsalt and pepper, to taste<\/p>\n<p>Assemble the salad according to how much you want.
